Mellow Mushroom’s gluten-free pizza taste testing had been on my to-do list for quite some time. After much patience and some traveling, I finally made it happen, and I’m glad I did.
For those who are not very familiar with the name, Mellow Mushroom is a restaurant chain out of the Southeastern U.S. that specializes in stone-baked pizzas, subs, calzones, and some exciting cocktails.
I went to one of their original locations in Atlanta, and it felt like I was in one of those cool, vintage pizza joints from the 1980s. The walls were covered in psychedelic art, and the interior was warm and inviting, making the experience even more enjoyable.
But, of course, my visit aimed to assess how their gluten-free pizzas measured up and study the menu details.
I got the job done, and in this post, I’ll share everything I learned about Mellow Mushroom’s GF pizza and menu.
Gluten-free pizzas are made on their 10″ GF crusts
Only their pizzas are gluten-free; calzones and subs are NOT GF
They offer 1 type of gluten-free crust
Mellow Mushroom’s gluten-free crust recipe is proprietary, so there’s no reliable info on ingredients and calories (I was told about 2 ingredients but there’s no way to confirm it, check out the ingredients section for more details)
They have a safety prep procedure for GF pizza orders, but I’m still not convinced their GF pizzas are 100% safe for celiacs (I’ll explain why down below)
Pizza’s Review | Taste, Texture, Prep, and Price
Mellow Mushroom offers four specialty pies on their GF menu, and of course, you can also build-your-own GF pie if none of the combos fit your mood.
My choice for this taste testing was their mighty meaty combo… It was topped with pepperoni, Italian sausage, ground beef, honey ham and applewood-smoked bacon;
I was craving a meaty pizza and meaty is what I got.
First, let me tell you about the test and texture, and then I’ll get into the prep, price, etc.
The Pizza (Taste & Texture)
The toppings (red sauce, mozzarella, and all the meats) were fresh and of good quality, and the balance between them was spot on. I could taste each topping, and they all came together nicely.
The honey ham and the smoked bacon pushed the flavor more toward the sweet and smoky side, but the pepperoni, sausage, and ground beef provided a savory counterbalance.
The crust specifically was crispy and thin, but the rest of the pizza was chewy, spongy, and grainy in texture. Despite heavy toppings and a lot of cheese, the crust held up well and kept its shape.
The great thing about the pizza was that the toppings and the crust were properly cooked. Nothing was under or overcooked, and I had no off-flavors or aftertastes.
Overall, I would say the pizza was good, but given the crispy texture of the crust, I would go with more veggie toppings than meat the next time.
Pizza Preparation
Mellow Mushroom claims to have a safety protocol in place for its gluten-free orders to avoid cross-contamination.
They refer to it as “Certified Gluten-Free Safe Procedures”.
This protocol includes using a crust that was prepared in a dedicated gluten-free facility and prepping the pizza in a specific preparation station in the restaurant.
Of course, separate utensils, cutters, peels and all other tools are part of their safety procedure.
All that said, I’m not sure if the gluten-free pizza at Mellow Mushroom is 100% safe for celiacs for two reasons: 1- they use the same oven for cooking both GF and regular pizzas, and 2- the safety protocol is not equally practiced at all of their locations.
So if you have celiac disease or severe gluten intolerance, I’d read the reviews of each restaurant to learn from others’ experiences and proceed cautiously.
Price
Mellow Mushroom’s prices for gluten-free pizzas are about average in the market.

Mellow Mushroom Gluten Free Crust Ingredients and Nutrition
Unlike most pizza joints, Mellow Mushroom doesn’t post its GF crust’s ingredients, claiming the recipe to be a “trade secret” (AKA proprietary knowledge).
However, in my conversation with one of the servers, he confirmed that at least two of the ingredients are mushroom and potato.
The potato part wasn’t a shock because most GF pizza crusts have some form of potato flour or starch in them, but the mushroom part was new to me.
In any case, both potatoes and mushrooms can be refined into flour, which can make for an interesting flavor profile.

Is Mellow Mushroom’s Gluten Free Crust Vegan?
Mellow Mushroom offers a Vegan pizza: the Vegan Veg-Out. And you can build your own Vegan pizza using their GF crust and Vegan cheese.
Going by their menu, we’ll have to take them at their word and trust that their GF crust is also vegan until we see a list of all the ingredients used in the crust.
